A photo of my first ever Christmas Cake, I baked it ,iced and decorated it...I will tell you how it takes after the big day...lol!! The traditional Christmas cake is a mixed fruit cake of raisins, cuurants, sultanas, glace cherries, candied mixed peel, black treacle, brown sugar, mixed chopped nuts, eggs, flour, mixed spice, nutmeg, cinnamon and brandy!! I hate glace cherries and candied peel so I substituted these for dried cranberries and chopped dates. It is then topped with a layer of mazipan and a layer of icing then decorated. Some people don't marizipan and ice it and put almonds and glace cherries on the top and glaze it with apricot jam. Fingers crossed it tastes good....
